Make Your Own Spring Macaroons!

        Although macaroons are hard to perfect, they are fun to make! At the top of the picture is my first attempt at making macaroons. The macaroon on the bottom is my second attempt. There’s one thing I learned: you get better each time!

Recipe (for 20 macaroons):


  1. 1 cup almond flour
  2. 1 teaspoon salt
  3. 3 egg whites
  4. ¼ cup of sugar
  5. ¾ teaspoon of vanilla extract
  6. Food coloring


  1. 1 ½ sticks of butter
  2. 2 ½ cups of powdered sugar
  3. 1 ¼ teaspoon of vanilla extract
  4. 2 tablespoons of heavy cream


  1. Batter
    1. Put the powdered sugar, ½ teaspoon of salt, and almond flower in a bowl. Sift the ingredients through a strainer. 
    2. Use a hand mixer to beat ½ tablespoon of salt into the egg whites. Continue beating until the mixture is fluffy. 
    3. Slowly mix the sugar into the bowl. Beat until the mixture is stiff. If you can flip the bowl over completely without anything falling out it is ready.
    4. Add in food coloring and vanilla.
    5. Gradually add in the almond flour.
    6. Put the mixture into a piping bag.
    7. Cover the cookie tray with parchment paper. 
    8. Pipe the mixture onto a cookie tray. 
    9. Drop the tray onto a flat surface to remove bubbles. 
    10. Preheat the oven to 350 degrees Fahrenheit
    11. Let the batter sit for 2 hours.
  2. Filling
    1. Mix butter, powdered sugar, vanilla, and heavy cream together
  3. Baking the macaroons
    1. After letting the cookie tray sit, place it into the oven for 15-18 minutes. 
  4. Assembling the macaroons
    1. Sandwich a teaspoon of filling in between two macaroon ends. 
    2. Let them sit for 12 hours.
  5. Now enjoy your macaroons!
